2023 Northern Lights Garlic Variety Information:

Below is a list with pictures of the varieties of Garlic Seed and Eating Garlic we have planted for 2023. Each garlic variety has it’s own distinct flavor and has different uses based on the flavors. Once you have decided what varieties you would like to purchase you can order on our page. We do not ship to Hawaii and specific counties in Idaho and Washington.

Georgian Fire

Porcelain sub species. This garlic is great for salsa and pickling with its intense hot flavor when raw. Possesses a robust rich flavor when cooked.

German Red

Light purple-skinned, hardneck rocambole-type variety known for its robust, spicy flavor. The German Red is well adapted to northern climates, and stores well.

Full bodied, strong and spicy garlic that reliably procedures large, satiny white and purple heads. The easy to peel cloves are wrapped in fawn colored skins. A widely popular variety that sets the standard for true garlic flavor.

Rocambole (Tamarack)

This robust garlic flavor hardneck rocambole type variety has taste profile with more bite than German Red. Averages 6 cloves per bulb.

We have found this to be the favorite for flavor from friends and family. Used both raw and as a powder it will provide a flavorful boost to any dish. This was one of our first seed garlic purchases.

Spanish Roja

Rocambole Variety. Deep, rich, complex flavor. flavor. Performs well in colder climates and can tolerate excess moisture better than most. Averages 8-12 cloves per bulb.

Music

Porcelain Variety. Originally imported from Italy, Music performs very well in cold climates. A robust grower that has big bulbs averaging 4-6 cloves per bulb. Cloves are mild when cooked, hot when eaten raw and sweet when baked.

Romanian Red

Porcelain Variety. A robust grower, producing 4 to 5 large, easy to peel cloves. It is a hot garlic with a “bite” when eaten raw. Has a wonderful buttery rich flavor when cooked. Truly a “Garlic lover’s” garlic. This garlic stores well.

Georgia Crystal

Porcelain Variety – Known as one of the best toasting garlic with a superb flavor milder than German Extra Hardy . Averaging 4-6 large cloves/bulb with easy to peel jumbo cloves. This variety grows well in Northern States and stores well.

Note: This is our first year growing this variety and we will only be including these in our culinary sampler packs as we are keeping the large bulbs to replant this Fall.

Majestic

Porcelain Variety originating in Canada. A very hardy and robust grower that performs well in Northern states. Averaging 4-6 large cloves/bulb, it is one of the mildest tasting porcelain garlics with easy-to-peel jumbo cloves. Longer storing until early spring.

Chesnok Red

This garlic is a richly flavored hardneck garlic variety known for its beautiful purple-striped bulbs and complex, sweet flavor when roasted.
